I sent this to the restaurant. There was no response . . . You probably knew this was coming, no? I have never had such a bad show of service in a restaurant: surly waiters, indifferent owner, absurd dining rules—sorry, I believe you referred to it as a "concept." It was ludicrous, totally cliché. Twenty years ago, I had my wedding lunch at Jean-Georges. I came to Wayan with high expectations. The fantasy is most certainly better than the reality. I will commend you on the quality of the kitchen. Why go and completely ruin it with the accompanying farcical comedy? Why the rush? All the plates came within 20 min. of seating us. The restaurant was comparatively empty despite your numerous email/text pleas to not be late, start walking to the restaurant now, ensure the party is complete, etc. Oh yeah, there was also the text that since we were seven people, we'd have a two-hour slot to dine. We were told we could no longer order additional mains because there was final call on savory dishes. It was 9:15 PM. I was again flabbergasted when told the reason for this deranged decision: the chef wanted to get home and beat the traffic. Apparently, Pride had proven too much. Are you not in the business of making money? Maybe I'm wrong . . . I'll skip the parts about having to order everything up front, our bottle of wine on the other end of the room from our table, and even-handed disinterest among all staff in their guests. As a New Yorker, I knew nothing would come of our protestations, but our foreign visitors had faith in the renowned restaurateur. He could have cared less. Two desserts with his compliments. I wish you the best, but I doubt Wayan will make it to the Fall. Frank Flores
