Exceptional
Exceptional in every way. We sat next to an interior garden which was beautiful. Food was delicious, staff was warm, welcoming, and personable - attentive without being overbearing. They were accommodating with the menu when we informed them we are pescatarians. Words cannot describe how delicious the chocolate souffle was. The chef stopped by to visit with each table at the end of the meal which was also delightful.
Saddle a perfect experience
I love eating at saddle, a unique experience, perfect cooking, they have the best product on the market, the pigeon is the best I have ever tried, an excellent wine list and the treatment of the room staff is exquisite, very humane, I have never seen anything like it, they form a very good team orchestrated sincerely perfect. A unique experience I will return for sure
Excellent fine dining in Madrid!
Ambiance is really nice! More of a contemparary/clean atmosphere rather than a classic luxurious feel. I prefer the classic style but this was still very nice. You have a choice between an a la carte menu and a pre-fixe menu. We opted for the a la carte. I believe the pre-fixe menu was 160€. One thing I liked is you could order 1/2 portions of some of the entrees as a starter which is what I did. I had the Turbot in a champagne sauce and it was excellent. My wife ordered an asparagus starter which she really enjoyed. The start of the show was the risotto with morels and seared foie gras and lots of foie gras. I ordered the lamb shoulder which was deboned table side and very flavorful, excellent dish. They had a nice touch with the bread cart and cheese cart. The bread was amazing! The cheese cart probably had 30 or so cheeses and would have loved to do it but we were too full. The wine list was very comprehensive but pricey. Service was outstanding…it was a team approach but it worked very well. One thing I didn’t like was the Somm was steering me to a 600€ wine without really understanding our preferences or our budget. I ended getting a Roda I from Rioja that was really good and it was €110. This was a value for their list as I found most wines priced quite a bit higher than comparable restaurants in Madrid. This was a wonderful evening and highly recommend although our personal favorite was Horcher on this trip.
Delicious, highly recommended
I thought it was great, we ate delicious, Chef Noam came out, and we congratulated him, we would definitely return. We ordered a 200% risotto and delicious turbot, the desserts were also fabulous

We had to decide on the restaurant for the anniversary celebration and finally I selected Saddle, trusting, as I did, that it would be a safe bet. Beautiful, elegant place, with a cosmopolitan and slightly casual touch. You breathe class in the atmosphere and you really feel very comfortable, because we are talking about a comfortable restaurant where you can relax and taste a magnificent meal served with care and professionalism by all the members of the room and also with the fundamental separation between tables to That other diners do not disturb your privacy. The wait staff was very attentive to us during the long lunch. With tact and professionalism we really felt pampered, including Noam's visit to our table, various details such as the invitation to a glass of champagne as a welcome, the surprise and delicious tapa of the best tripe in Madrid in the middle of the meal or a delicious chocolate cake with a candle included, everything, I insist, by surprise and with exquisite taste. The cuisine based on an excellent product stands out in its stews above all (the tripe is from another world). The perretxikos in 2 textures with the delicious pickled egg and the exquisite tear peas, with a sauce that perhaps wasn't up to par. The adventure of the particular interpretation of the meunière sauce for sole, with excessive red meat flavor, is risky. Final sweet explosion with the new detail of the gift of the exquisite chocolate cake and the superb Grand Mernier soufflé in addition to the trays of chocolates. The soufflé is one of the most delicious desserts I was fortunate enough to try and should be considered a must for any first visitor to this restaurant. Finally, we should highlight the good habit of maintaining the classic finishing service at the table, both in the preparation of the exquisite coffee at the end and in the case of the preparation of the sole. It is a hallmark of the restaurant and another value to highlight. In short, Saddle is as recommendable as ever, with its well-deserved Michelin star and I hope to visit them again soon to try the sweetbreads that Noam confessed to me as his favorite dish and that he recommended I not miss next time.
Saved by the hock
The restaurant offers a Seasons Menu and a menu with a wide range to choose from. We started with a tiny dish of crab seasoned with sherry and a very limited amount of perrechicos. Fortunately, the main dish was a beef shank with which they pay tribute to Santi Santamaría and in truth we also paid tribute to ourselves with a well-cooked dish and with quality raw materials. The very complete cheese cart should also be highlighted. The table service is attentive, friendly and always attentive to the diners.

A 10 in all aspects
We visited Saddle to celebrate our 10th anniversary and it couldn't have been a better choice. From the moment you walk through the door, the service is exquisite and the place is beautiful and cozy. We ordered the tasting menu and we loved each dish, everything was tasty and they were very well prepared seasonal products and some flavors fit together perfectly. We found the menu spectacular but we wanted to try the lentils with foie that were off the menu and also the pigeon, which they always have but it caught our attention. Both dishes are very worth it, they are delicious. They also had several very nice details with us on the occasion of the anniversary, which is always appreciated. I also have to highlight that the menu is almost entirely suitable for celiacs and what was not was adapted to perfection! Price-quality is very reasonable, of course it is not a restaurant to go to regularly but for special occasions it has become in one of our favorites! We are already looking forward to returning!! Thank you very much to all the staff for being so kind, we will be there again soon
Terrible service
The service was terrible, from the entrance there was no attention. They didn't even ask us for our coats when we entered, to be a Michelin star I expected a better experience. The worst of all is that being in the private ones, the waiters forget you and I wouldn't recommend going! The food is good, but not for what it is sold.

This is our new favourite restaurant on the planet. Every aspect of our dinner tonight was perfection. The space is lovely, service is faultless, and the food was extraordinary. A second Michelin Star is inevitable, and soon. We started with cocktails, and my whiskey sour was the best I have ever had, The wine list is extensive, but there are some absolute gems at reasonable prices. We had a fabulous Albarino at around 55 euros, and a fantastic Rioja around the same price. One of the extraordinary things about Saddle is that you can order half portions, if you are not particularly hungry. I had a half portion of crab, which was perfect, followed by a half portion of veal sweetbreads, which was the best meat course I have experienced in years. My wife had a half portion of foie gras, followed by quail with black truffles. Both just perfect. My wife finished with a half portion of cheese, which included a mind-blowing two year old cheese, made by Danish monks, This was genuinely the best dining experience we have had anywhere in the world for many years. An absolutely perfect dinner.
