I was not impressed at all. The restaurant boasts 3 Michelin Stars and on this visit I wouldn't give them more than 2 stars....Upon entering we were greeted by a nice hostess who said follow me this way and then was instructed to take coats and disappeared. We waited 10 min (no kidding) and then reproached the stand and a different lady then told us we had no reservations?!? Did the other delete it or make an advance seating? I don't know but that was strike oneI will break it down below to show exactly my review.Service 2 starsMore than 11 I counted on the floor with NO MANGER to be seen. How do I know this? I own 56 restaurants in United States and it's in my blood but I'll get to that. (Yes I'm American but don't judge)These folks openly seemed to disagree and fly on their own through service. Front waiter/back waiter was non existent! Only back waiter remained.I poured water & wine for my table. Several times towards the end of service they started to stop me but let's be fair, at 600a+ euro that just shouldn't happen. Bread service was lacking but they did serve it when asked. Also, this is important....they had no supervisor delegating to staff-Look at that tables plate maintenance They need waterThey need more wineThe need their table crumbedIn fine dining that's 101 and should be happening. Very bad overall experience in a service that should have been stainless. They did career to my children so that's why it's 2 and not 1. (So we have kids so we don't deserve service?) let me remind you 600 euro....Food 3 StarsThey did an average job here. The Chefs gift was a great start but it fizzled after that. We had the crusted crab -1 star for taste/too dry. 3 stars plate presentation (liked the flowers) 2 star for overall dish. Should have been better-sunflower seeds? As an Escoffier/CIA graduate and TA I can assure you that is not "modern cooking" that is guessing.The oysters where oysters- not shucked and with a regular mignonette. Fresh but Underwhelmed to say the least. Seaweed bed on Bamboo interesting though 3 starsFrench onion soup- no broth and Luke warm- 2 starsKids- pasta- no sauce and dried Parmesan on the side . Are you kidding? That was a solid 1 star ( my 4 year old could have made that better) yes, he is still a paying guest and not a brush over Kid Fish- good plate but very bland. Tartar was good and fresh 3 starsFilet of Steak- Plate was ok. Potatoes were perfect and the texture touch on the top was stellar. Meat was cooked right and was warm, flavoring was missing and there was no seasoning. (I know there wasn't. Not even S& P) so dipping sauces were needed and very tasty when applied this was a solid 3 starsDessert This was were good showed up!!!! The hazelnut and orange dessert was pure excellence. 5 stars all the way! I will be stealing that orange dessert for sure, texture, flavor and color we're bang on! Couldn't have done it better. Escoffier would have been proud of this. His motto has always been do not change the shape of the food and here was no exception. This pastry chef is the only reason this restaurant deserves any stars. Well done! If your in America look me up, I'll be the best paying employer for sure my feelings are that they use him on a consulting basis at this point but staff say he is on site. (Just not today lol)Wine was good but wine list is SADLY LACKING! If I saw my favorites I would have gladly paid 500+ but your list is a limited version of a small street corner bistro. People need to be wowed not given the bare minimum 2 Stars is generous here. The burgundy was good but not amazing but purchase price was appropriate Cocktail- Manhattan 2 stars as there was a fly in it and the BT should have seen that. Then followed by the server....it happens in our business but recovering is key, took them 14 min to return another one and it went through 4 people and ended up staying in the station deck until the back water realized that was mine and brought it. In my opinion, he was the ONOY ONE on his game and the rest seemed unorganized and not engaged.There is the reasons why I say there was no management presence on the floor. I demand positive engagement of my people and if they can't they don't belong working on my businesses.This isn't an employee issue this is a chef/management issue. Fix it guys! I know most of your guests don't see what I see but I can tell ownership that if this is not a B TEAM problem then you are definitely losing money with this poor performance. My family of 4 usually spends over 1000 euro on these types of nights out. You were my lowest spend this trip. I hope this review is looked at constructively and not as damning. I really believe their is talent there if it's managed properly. Merci
