Claude Colliot is the predictable result of the nouvelle-cuisine evolution: steeped in the fundamentals, proud of its craft, and well-executed at all stages. We had the tasting menu, which started extremely strong and finished okay: razor clams with cauliflower florets (delicious), brill (a species of turbot/flatfish, which was excellent but nothing stunning), a deep fried pork rib (again, good, nothing special), a plum salad (very good), and a cream cheese ice cream (also good). Like every place we would go, there were no wine pairings, not even as a concept, so you drank what you wanted to drink - which was refreshing. Also, the relative shortness of the tasting menu was refreshing too - though they certainly left you well fed, they didn't bombard you with the redundancy of excessive chef ego. The service was excellent, but let's face it - their American should be better (sorry world, it's a bald fact). I was less impressed because it was my first dinner in Paris and here in California we have high expectations from consistent high quality. That noted, I was being irrational to feel this way. Having balanced those two thoughts, my assessment is this - very fine food at a thinly overpriced cost. There was a tiny black gnat that crawled out of my plum salad. This did not disgust me (I said it was very good), as it suggested the produce was sitting around outside because it was fresh and there was no need to refrigerate it; still, considering the cost incurred, that little guy should not have been missed. 3.9 stars rounded up.
