A bit of a let-down
Out to celebrate my father's 75th anniversary, but I am sorry to say our evening at Aster's turned out to be a somewhat disappointing experience.
The table readied for our party was a table of 6 - despite our booking of 11. We thus had to wait for close to 30 minutes before we were finally seated at a table large enough. The waiting staff seemed young and inexperienced, and poorly organized - perhaps a bit stressed? Let it be said they were friendly and smiling, though!
For appetizers most of us had the grilled scallops, which were absolutely fine. From the _very_ limited main course menu (which by itself is perfectly fine) we were at least 4 or 5 who had looked forward to ordering the turbot. The chef explained they had unfortunately run out of turbot, as there had been an unexpected high influx of drop-in guests ordering turbot earlier in the evening. An experienced restaurant should naturally reserve at least 3-4 portions to a party of 11 which has booked two days in advance.
The venison (deer) and catch-of-the-day (cod) were delicious. The chef's quality assurance lamentlably failed, however, when it came to the "lutefisk". At least two plates consisted of very bony cuts that were obviously not fit for fine dining at a self-declared seafood restaurant. Aster's take on the traditional Christmas dish of pork ribs was by and large successful, with a very tasty and perfectly cooked and seasoned pork meat. However, the "pièce de résistance" - the crispy pork crackling - which is a real challenge to get right for both professionals and amateurs alike - was a real disappointment. Instead of the traditional crispy crackling, Aster's dish was served with two pieces of something more akin to pork rinds placed on the side of the meat. In no way did this even come close to the traditional way of serving Christmas pork ribs.
Another indication of the chef's cavalier approach to quality assurance was the fact that the boiled potatoes that accompanied several of the main courses, were sadly undercooked. When this was pointed out to the chef, it took at least five minutes before he was back with a bowl of additional boiled potatoes - and by that time, we were more than halfway through our under-potatoed meals. To add insult to injury, the additional potatoes were _each and every one of them_ even more undercooked than the ones first served.
In light of his errors, we would have expected the chef to present an apology and at least signal some degree of much warranted humbleness; instead, he seemed only marginally interested to learn our feedback, and retreated to the kitchen and did not come out for the rest of the evening.
The head waitress did a good job throughout the evening, and was both friendly and service-minded. The servers were young and clearly inexperienced, yet friendly and smiling. Tip: You serve à la carte dishes from the right (when possible), and clear from the left. Such an easy thing to get right, and right away you seem like a professional place!
All in all, a lot more should be expected of this relatively pricey restaurant, which is clearly ambitious and surely aspires to be recognized as one of Bergen's top seafood restaurants. Such recognition, however, requires quality and consistency in all aspects of the dining experience, and sadly the overall experience this time just was not a good one.

Impressive New Seafood Restaurant
This new and ambiguous seafood restaurant is located in the gentrified area of Damsgårdsundet. We went here for our annual business meet-up and was much impressed with the quality of the food and the attentive service of a youthful staff.
The restaurant offers a nice set menu based on seasonal and local ingredients. We had a nice mussel soup for starter, followed by main entre of hake and a cream pudding dessert with blueberry and aniseed sauce. All dishes where tasteful and nicely presented.
