Before I begin, I must say that the service, chef, food, and environment are all incredible. Best quality sushi I've had in Chicago and the intimate, authentic Japanese setting were true highlights. I loved the experience of this secret underground room where all the magic was happening - kind of like a sushi speakeasy. The reason for the three stars is that the entire meal felt so RUSHED. As with the rest of these reviews I've seen, they really crank out 15 courses non-stop and it feels quite forced, which does not grant for a very relaxing dining experience. The time from the first course to the last course was legitimately 30 minutes, which really is much too fast for a true Omakase experience. I would expect at least twice that amount of time for 15 courses. You were not given any time to stop and enjoy the sushi between courses. I do not fault the waitstaff at all - it seems that the real issue is with the management and how many sessions they try to fit into a night. My boyfriend and I were the last in the room with about 20 minutes left in the reservation and already the staff were clearing plates and prepping for the next reservation which made us feel rushed, uncomfortable and unwelcome. The setting is small, only 6 total people seated the night we went, so I can understand the need to cycle more people through but this was at the expense of the entire experience. Again, I will say that the sushi was delicious and the staff did the best they could with the time they were given - Emily our waitress was fantastic at making sure we had what we needed and explaining all the dishes as they were served. I just would hope that the management recognizes the need for the reservation periods to be longer, to better space out the courses, and to allow more buffer time between the reservations.
