Each dish here is finely crafted, expertly assembled, and uses the finest of ingredients, including caviar, scampi, wagyu and toro. Every mouthful was enjoyable and delicate. Heavily seafood focussed, with only one dish containing a small amount of beef. One of us had a minor food intolerance which was accommodated easily, but you could not dine here as a vegetarian/non-fish eater and have the same experience (I don't think).
Of the individual courses the 'Spring Delights' course, which consisted of 8 unique mouthfuls of perfection, was the standout, and would presumably take an individual chef many hours to prepare.
Service was very formal, almost regimented, to the point where some may feel uncomfortable. There was a veritable army of wait staff, at times who seemed to outnumber guests, and each of whom was knowledgable and informative.
The atmosphere is also formal and may not suit all. Seats are taken at the bar, and whilst not crowded together at all, would make it difficult to have a quiet private conversation. There were a few seats at some separate tables, but they were not used on the night I was there and I got the impression they were for before/after dinner drinks rather than dining....the menu almost relies on you sitting right next to the chefs as they freshly prepare each course in front of you.
So why only a four star review? Simply for the value for money aspect. For almost $400 a head (food and matched wines), I expect to leave full. Here, I considered going for 2nd dinner on the walk home (although that's cos I'm greedy, not hungry!). I can understand it to some extent, as the ingredients were expensive and the labour involved in perfectly cooking and presenting them is intense, although perhaps one larger course of lower 'poshness' could be given just to please the big eaters amongst the crowd.
Similarly for almost $400, I expect to leave tipsy, if not drunk. Here, I could have driven home. I would estimate the wine pours at about 50ml per course, perhaps less for the sake. This is less than all other tasting menus I have been to, and given they are charging around $20 per course for 1/14th of wines that cost $50 per bottle (ie $4 worth of wine), doesn't represent value. Mark-ups of 200% are reasonable in fine restaurants, this was 600%. In addition, it irked me a little that wines were poured away from the diners...whilst we were presented with the bottle to view, you miss the theatre of the pour and I got the impression they probably weigh the pours to ensure you are not getting more than they want you to. This might be only my impression, but, as evidenced by the effort put into making the food look so perfect, impressions count for a lot.
Overall, we enjoyed the meal, but would not come again. It is a place to experience high-end Japanese tradition, with the epicurious pompery that comes with it, but not to eat your fill and have a fun night. The former you only need to do once in your life.
