A very small, warm, contemporary dining room greets you with warm Venetian charm. The food, very good and speaks to the long Venetian culture. One problem, ultra simplified translations for non Italian speakers results in incomplete and unglamorous sounding dishes. For example we were told "meatballs". In fact it was three different seasoned balls of beef tartar. Each mind bogglingly complex and flavorful. The standout incorporating a molecular gastronomy technique to creating a frozen, intensely flavored tomato powder and coating a tartar ball with it. The end result tasting exactly like an American meatloaf. Another coated in black truffles and powdered olive oil that becomes rich and liquid when it touches the tongue.Go with a very open mind and let sensory dining envelope you.Asian influences are everywhere owing to the Venetian empire once being the center of trade with the East. It is reflected in the food.An example, a tender mussel dressed with what seems to be sweet miso paste and a sweetened soy sauce. Briny goodness that works. The traditional bacccala mantecato sits atop a bed of Indian spiced black lentils instead of polenta. It too works.Another example, a pork dish served two ways, also very good but different. A "sausage" wrapped in bacon. Coarse ground enriched by a lot of fat. Solid. The accompanying pork belly, finished in Asian spices, almost an homage to the Chinese barbecue pork.Classics of Venezia are also represented. A simple crudo of lagoon fish and crab, excellent in conveying place. Simply prepared and dressed in EVOO. The fish, gelatinous and eel like, the crab, very briny like a small shoreline crab would be.Further, a simple seafood soup, its base, the classic Venetian, intensely flavored, gently sweet, goh (goby) broth. Flavored with aquatic herbs and studded with sea snails, sepia and mussels. Tomato adds acidity. Stunning. Extremely friendly Italian service.Very good wine list. Excellent recommendations made by the servers. Unfortunately were not told of a wine pairing for our multicourse meal which would have been preferable to ordering a full bottle and supplementing it with matching glasses. Very fair pricing. 5,7,9 course menus at €95, €110, €140 respectively. Ala carte also available.Lunch and dinner. One month advance Reservation required. Credit card to warranty the reservation at the time of booking.Deserving of the star? Yes but you would be wise to try the basics of Venetian cuisine before experiencing this elevated version. Excellent.
