Chef Gabriel Kreuther is the chef and the name behind this restaurant, offering a 3- or 4-course Alsatian tasting menu, lunch and dinner menu, as well as a chef's table option. We opted to do the chef's tasting menu, which included the following: +Savory Kougelhopf - with chive fromage blanc +Shiso Mojito - with white chocolate and mint powder +Ginger & Pineapple Kombucha - with coconut snow +Meyer Lemon Meringue - with a juniper hush puppy +Mezcal Paloma Pate de Fruit - with aleppo and sea salt +Local Ramp & Potato Panisse - with herbs aioli +Aged Yellowtail Kingfish Crudo - with fermented farro, pickled purple radish, and mandarin vinaigrette +Hawaiian Red Crab - with pickled jicama, aji peppers, and lentil "hummus" +Kumamoto Oyster & Bison Tartare - with golden kaluga caviar, yuzu, and einkorn cracker +Foie Gras Terrine & Country Pate - with honey-poached rhubarb, husk cherries, and housemade butter bread +Sturgeon & Sauerkraut Tart - with applewood smoke, celery, root cream, and imperial kaluga caviar +French White Asparagus Cooked in Kombu & Clay - with garm egg aioli, celery root cream, and imperial kaluga caviar +Baked Bucks County Polenta - with riverine rach water buffalo, local butternut squash, and red wine mornay +Hay Smoked - Two Week Aged Duck Breast - with spiced sweet potatoes, toasted cashew, and apple-mustard brown butter +Roasted Farro & Chicken Consomee - with kelp oil +Carrot - with buckwheat sable, orange cream espuma, and carrot sorbet +Fraise des Bois Frappe Brulee - with sable breton, fresh fraise des bois, and tarragon sorbet +Banana Foster - with passion fruit sauce and macadamia toffee Everything was plated beautifully, and the succession of the courses with its pacing was good. I just wasn't fan of some of the ingredients, such as the mint powder, the farro, or the aleppo as it was too overwhelming and ruined the dish. Service was friendly and attentive.
