Fujiyama Japanese Hibachi & Sushi Highlands Ranch Reviews from The Last Year

I had a great experience at Fujiyama! I went to a late lunch on a Sunday afternoon. We were greeted and seated immediately. The restaurant is large and clean. The server was prompt and polite, along with the rest of the staff. I ordered a hot green tea and spring rolls to begin. The spring rolls were crispy and flaky on the outside and melt in your mouth on the inside. They were delicious! I ordered three rolls to share. Rock n' Roll, was actually very large. They had a liter flavor, with a little crisp, and a small amount of spice. Crunchy Spicy Scallop Roll was simple in flavor, a little bit chewy, and slightly spicy. Baja California Roll was my favorite of the three. It was just a spicier California roll, with spicy mayo. The cucumber cut the spice nicely. I plan to go back to this restaurant and recommend!

The food is good, but they squeeze so many people at a table it's impossible to comfortably enjoy a meal while I'm rubbing legs with the stranger next to me. Could definitely bring it down to 8 people a table so the dining experience could be comfortable.
Good experience with the staff.
Hostess sat us right away, the dining room was empty, except one other table. The hibachi side had more people. The ambiance in the restaurant was okay, something feels a bit off, huge walls with circular cutouts but no decor on the walls. Dining room furniture was well worn, could see tape on several chairs. We went in about 1.5 hours before closing and the dining room was dirty, a lot of rice on the dining room floor. Server greeted us promptly and was friendly. The food was okay, it was nothing extraordinary. The sushi (Ahi) had a slightly fishy aftertaste. The filet was cooked perfectly, and my husband enjoyed his scallops and chicken breast that came with his hibachi meal. The fried rice was not great, a bit dry and they went heavy on the sesame oil, no other real flavor. Same with the Hibachi Soup, very light onion flavor and not nearly enough salt. The ginger dressing on the salad was quite tasty. Will return eventually, but it wasn't so incredible that we want to go back asap.
Very disappointing first visit.
We ordered take out...a steak hibachi dinner. Turns out it came with some shrimp. I can't eat shrimp, and i didn't order shrimp... so I called and asked why there was shrimp. They said every meal came with shrimp and it was on the menu. Well, it's not the online menu that every meal comes with a very common allergen...aka the shrimp. What a waste of 30$. They said they couldn't do anything for me. Don't go here and waste your money on a business that doesn't care about you. There's plenty of other nice restaurants around. For example, I went to Smoothie King right before here. Their staff was great, and they helped me navigate the menu to avoid food allergies. Support caring businesses like that, and not like Fujiyama.

We loved Johnny! He was hilarious and his humor was definitely under appreciated. He also used a generous amount of butter which was delicious. My only complaint is nobody squirted sake in my mouth.
Sat at table in sushi area instead of hibachi area.
Bartender was also server. Sushi was good. They forgot to bring soup and salad that I ordered to start with sushi. They also forgot soup and salad for those who ordered from hibachi menu. Finally got attention to correct them and they brought out soup and salad for hibachi dinners but not for my add-on for sushi. We just got them to remove it from the check since I was finished eating at that point. Food was good but service was not. 2 stars
Super Sushi Surprise!
My bride & I stopped in for lunch on a weekday afternoon, and saw a large restaurant with twelve hibachi grill tables, and at least a dozen more booths and tables in the sushi bar... and NO other customers. We chose seating for two at the sushi prep counter. We thought to ourselves "Uh-Oh! We may regret this selection." -- but pressed ahead anyway. BOY OH BOY, are we glad we did. The attached photo shows the beautiful array of items we ordered, and they were all among the best we've had anywhere - including Hapi, Sushi Den, and other Denver-area legends. The star of the show was our Unagi roll with avocado (instead of cucumber) in the middle; absolutely stunning. Spider roll, saba (mackerel) and ama ebi (sweet shrimp) were all fantastic as well - so fresh! Even the seaweed salad was better than most places we've had it. Our chef and the waitress were perfectly accommodating (of course, they only had two patrons to wait on, but still...) We received just the right balance of attention and privacy to enjoy our meal. Having discovered this gem, I now want to return to give the hibachi a try as well. Don't let the shopping-center location fool you; this place has world-class sushi, AND Sapporo Ichiban ON TAP. ;-)
My son LOVED his 1st hibachi experience.
The food was delicious and our staff was fantastic. Super fun place to meet friends.

3 stars!???! Wow you yelpers are very generous! It doesnt afford to stay open but i guess Highlands Ranch needs to have something asian to cater to the community. Saturday night the wife made reservations for 4 at 6:30pm. We get there at 6:30pm sharp, was told to wait by the bar or bench and will be called. Ok sounds good we get that they have a certain amount of hibachi chefs to work the table. 30 mins later at 7pm. Our table is almost ready. We then decided we were waiting too long and and left. it took another 15 mins after they said our table was almost ready. 45 mins after our reservation time. Mind you we have gave this place chance after chance. No more. From the management to the staff. They all suck very badly and deserved to be closed down or bought out. Highlands Ranch needs a benihana here to takeover this tuuurible place!
We have been here a couple times for special occasions.
The food is always amazing we have had both hibachi and sushi. The service is excellent and a really fun environment! If you're looking for a fun night out give this place a try.

Celebrated a neighbors birthday with a evening out at Fujiyama. 6:30 reservation, were seated @ 7:00pm and waited to be order drinks for another 15 minutes as no one was working the bar. Service was extremely slow. When the old chef confirmed our orders, he forgot when cooking the steaks and seems annoyed when I corrected him a 3rd time. The lobster was NOT cooked through and once again he seemed more annoyed. This guy has NO business flinging knives. After a 3rd reminder, the waiter finally remembered to bring out a birthday desert. Luckly no one got sick, so I suppose that went right. If you going our for Habachi - stick with Benihana - that know there business and appreciate their clients

I have a notice stating that my bid has been accepted and is awaiting transfer. The reservation is for the 18th, but the “moderator” said he will confirm booking by the 28th. Is this an indicator that I may not have a reservation?

Hey @EvocativeFold67, welcome to appointmenttrader! Once the reservation is in your portfolio, you definitely own the timeslot, the review team would not have approved the trade if the reservation wasn't confirmed - so you are going :-) Judging from your post you bid today and are going tomorrow - don't worry as long as you initiated the name transfer, you are good - the transfer service has to work with the opening hours of the reservation team of the respective venue. You will likely see the transfer confirmation a couple hours before your reservation time.
